Meatless Monday; Buffalo Wing-Inspired Cauliflower Bites
Ingredients
- 6 tablespoons bottled hot sauce
- 4 tablespoons butter, melted
- 1 tablespoon white vinegar
- ½ teaspoon garlic powder
- Salt, to taste
- Black Pepper, to taste
- 2 cups Panko
- 1 small head cauliflower, florets cut into bite-sized pieces
- Cooking spray
Directions
Line a baking sheet with parchment paper. Preheat oven to 375 degrees F. Place hot sauce, melted butter, vinegar, garlic powder, salt, and black pepper in a bowl; whisk to combine. Place the Panko in a small, shallow bowl. Dip the cauliflower florets into the sauce and then coat in the Panko. Place Panko-coated cauliflower florets on the baking sheet. Lightly spray cauliflower florets with cooking spray. Bake until the Panko crumbs are golden brown, about 20 to 25 minutes. Remove baking sheet from the oven. If you have any extra sauce left over, you can brush the sauce onto the tops of the florets. Serve with carrot and celery sticks and prepared Ranch dressing. SERVES 6
