Ingredients
- 2 large eggs, plus 1 large egg white
- Kosher salt, to season
- Freshly ground black pepper, to season
- Cooking spray
- 1 small jalapeno, seeded and minced
- 6 cherry tomatoes, halved
- 1 green onion, thinly sliced
Directions
In a small bowl, whisk the eggs, egg white, salt, and black pepper. Place a small skillet over medium-low heat. When hot, lightly coat skillet with cooking spray. Add jalapeno and cherry tomatoes to the skillet; cook for 2 minutes or until soft. Add eggs. Cook for about 1 to 2 minutes, stirring gently, until eggs reach desired consistency. Plate, sprinkle with green onion.
