Marinated Feta Skewers
Ingredients
3 tablespoons freshly squeezed orange juice
2 teaspoons orange zest
2 teaspoons fennel seeds
1 teaspoon freshly ground black pepper
4 ounces of feta cheese, cut into ½-inch cubes
24 (6-inch) wooden skewers
24 fresh mint leaves
12 pitted green olives, halved
¼ large English cucumber, seeded and cut into ½-inch pieces
Directions
In a bowl big enough to hold the feta cubes, combine orange juice, orange zest, fennel seeds, and black pepper. Add feta to bowl; gently stir to coat. Place in the refrigerator for 3 hours or let marinate at room temperature for 1 hour.
Thread ingredients onto skewers, in the following order: 1 mint leaf, 1 olive half, 1 cube of marinated feta, and 1 cucumber chunk. The skewers can be made several hours ahead and stored in the refrigerator until ready to serve. Bring to room temperature before serving.
