Southwestern Black Beans:
Sauté ½ cup chopped onion, minced garlic (2 cloves), 1 teaspoon cumin, and ½ teaspoon chili powder for 3 minutes in a large nonstick skillet coated with cooking spray and set over medium-high heat. Reduce heat to low. Add 1 (15 ounce) can black beans (rinsed and drained), 1 ½ cups frozen corn and 1 ½ cups fresh salsa; cook until heated through, about 4 minutes. Evenly spoon mixture into 4 baked potatoes, and then evenly top with ¼ cup shredded cheese and chopped fresh cilantro.
